I am a huge sucker for a simple crockpot dinner during the cool winter months. This slow cooker Mississippi Chicken Recipe makes a great lazy weeknight family dinner. You only need 5 ingredients and 5 minutes of prep time and the crockpot does all the hard work.
This chicken is wonderful on its own dipped in some ranch dressing, or served on a bun with cheese. This is sure to be a hit with both kids and adults, and will become a staple in your dinner rotation.
Ingredient Notes
Chicken Breasts: I used boneless skinless chicken breasts for my Mississippi, because they are my kids favorite and I always have some on hand. Chicken thighs can be swapped in for the chicken breasts if you wish. You will follow all of the same steps, the only change will you will need to adjust the cook time.
Au Jus Gravy Packet: I find these gravy packets in the seasoning aisle of my local grocery store. If you can not find one you can make it from scratch easily or use a brown gravy packet or onion gravy packet. The taste will change a bit, but the overall flavor profile will be similar.
Ranch Seasoning: The ranch seasoning packet gives the chicken lots of flavor and should not be skipped. I find mine above the bottled ranch dressing at my local grocery store. You can also make a homemade version if you don't want to use a store bought packet.

- Add chicken breasts to the bottom of your slow cooker. Try not to pile them on top of each other, or they will take longer to cook.
- Sprinkle ranch seasoning and Au Jus Seasoning over top of all of the chicken.
- Place butter on top of chicken
- Add whole pepperoncini peppers around the chicken.
- Close the lid and cook on HIGH for 2-3 hours or LOW for 4-6 hours.
- Once chicken is cooked through, remove and shred to a fork or hand mixer to save time.
- Serve the chicken warm with sides of choice, or place on a bun with your favorite cheese (I recommend provolone or mozzarella) and serve as a sandwich.
Leftover Storage Instructions
Fridge
Store leftover shredded chicken in an airtight container in the fridge for up to 4 days. Reheat before servings.
Freezer
To freeze the cooked Mississippi chicken, cook, shred and let cool completely. Place shredded chicken in a freezer safe bag and seal. Store flat for up to 3 months. Thaw and warm before serving.
Pro Tips
Don't Add Extra Liquid: No need to add any extra liquid to your crockpot, because the chicken will create its own juices while cooking. Don't worry the chicken will not burn or get dried out, I promise!
The Right Crockpot: Make sure your crockpot is large enough to fit all of the chicken side by side in one row. If you add the chicken on top of each other the chicken will take longer to cook. I use a large 9 quart size and my chicken is cooked perfectly every time.

I use a 9 Quart Crockpot for this Mississippi Chicken Recipe and it fits 4 chicken breasts great. If you only have a small one available to you it will work, but the chicken will take longer to cook.
