It is nearly November which means that Thanksgiving is right around the corner! My entire family and I gather for multiple Thanksgiving celebrations throughout the week and by the end I am beyond stuffed with delicious food. Since my husband is in the Navy, we travel and move often. This means that we can not always be home for Thanksgiving. Through the years I have done many Thanksgiving dinners completely on my own. Fall is officially in full swing! Here in Wisconsin it went from cool to cold basically overnight. My family and I have broke out the long sleeves, boots, and my favorite, the crockpot! Once the leaves start falling and the air turns crisp I immediately start craving hearty soups, stews and all the warm comfort foods. One of our favorite of those foods is this Crockpot Chicken and Dumplings with Biscuits. I love how simple, filling, and tasty it is. This makes a perfect weeknight meal with little prep work, and the best part is that the crockpot does most of the work. Growing up in the Midwest chili was a cold weather staple in my home. One of the most requested meals from my brother and I when snow was on the ground was mom’s chili. My brother and I would spend hours out in the cold building snowmen, injuring ourselves on sleds, and attempting to build igloos. My absolute favorite part of those chilly, pun intended, days was coming inside and smelling my mom’s chili on the stove simmering away. We would impatiently wait until dinner time when we could get our cold hands on the warm bowl of chili and chow down. Now, many years later, my mom’s chili recipe has evolved into the best Sweet and Spicy Chili Mac and Cheese! Some of the ingredients have changed but the soul of this chili is still the same.
Whenever I am in a hurry, or trying to think of something delicious my mind immediately goes to pizza. As a family we eat A LOT of pizza, at least once a week. Therefore, I have come up with a number of delicious and creative pizza and flatbread recipes over the years. This Vegetarian Flatbread Pizza with Fresh Rosemary is one of my personal favorites.
