This play on the classic snickerdoodle cookie is super chewy, thick and packed with all the classic flavors we know and love. This snickerdoodle dessert is simple to make and ready fast in about 30 minutes making it great for kids to help with.

- Pantry Staples: These brownies require all the typical baking essentials like sugar, brown sugar, flour, baking powder and salt. I like to use all-purpose flour for this recipe, but you can substitute whole wheat flour or almond flour if you wish. Also, you can swap in a sugar alternative for the granulated white sugar as well.
- Butter, Eggs and Milk: You can use regular dairy butter and milk for these blondies, or milk and butter alternatives. I prefer using almond milk and a plant based butter myself, but any option will work for this recipe.

Instructions
- Start by placing the butter in a microwave safe bowl and melt in the microwave for 60 seconds or until completely melted.
- Place the melted butter, sugars, in a large bowl and use a hand or stand mixer to beat on low for several minutes until very well combined.
- Next, add the eggs, milk and vanilla extract then stir until the eggs are just combined.
- Add the flour, baking powder, cream of tartar, and salt to the large bowl and stir until just combined. Try not to over mix the batter.
- Place the batter in a prepped 11x7 inch baking dish and smooth until it is in an even layer. The brownie batter will be thick so try your best.
- Place the sugar and cinnamon in a small bowl and stir to combine then sprinkle over the top of the blondies in the pan. Place the blondies on the center rack of a preheated oven at 350 degrees F for 25-30 minutes or until a toothpick comes out clean. Once baked, serve the snickerdoodle blondie bars warm or store leftovers accordingly.

To store leftover snickerdoodle blondies cover the cooled pan with foil and store at room temperature. Alternatively, you can remove the brownies from the pan and store in an airtight container. If you do not have a 11x7 inch baking dish you can use a 13x9 inch dish, but the brownies will not be as thick and you can reduce the baking time by a about 5 minutes.

I used a 7x11 pan and I just could not get them to cook through the middle. I started off with 25, then 30, then 35… didn’t want to over cook them so I stopped at 40. They taste delicious though and I’m hoping they’ll be good frozen!

Yes, you should be able to make that swap. I would use 3/4 a cup of oil and see how the batter texture is then adjust from there. Also, I would use a neutral tasting oil like vegetable oil. Good luck!
