Use a sharp knife to slice each banana into even ¼ inch slices, discarding of the end pieces.
.Add 1-2 teaspoon of peanut butter to one slice of banana. Add another slice of banana on top of the peanut butter and gently push down to secure. Place bite on parchment paper lined cookie sheet or large plate. Repeat until all of the chocolate banana bites are sandwiched together.
Next, place tray of banana bites in the freezer covered and chill for at least 1 hour.
Once chilled, place melting chocolate in small microwave safe bowl and heat in 30 second intervals stirring in between until the chocolate is completely melted. Mine usually take 1-2 minutes.
One at a time, dip half of the peanut butter banana bite into the chocolate letting the excess drip off. If adding diced almonds then immediately dip the chocolate coated end into a small bowl of nuts then place back onto parchment paper lined tray. Repeat this until all the bites are coated in chocolate and nuts (optional) then place back in the freezer covered for 10 minutes, or until the chocolate is set. Enjoy immediately or store leftovers accordingly.
Leftover Storage: Store leftovers in an airtight container in the freezer for up to 2 months. When ready to eat let sit out at room temperature for about 5 minutes, because they will get very hard when frozen.Freezing Tip: When freezing the banana bites makes sure they are covered (foil or a cookie sheet with a lid work well) to avoid the bananas from turning brown.More Chocolate Option: If you want to cover the entire banana bite in chocolate you easily can by double the chocolate and dunking the entire thing in. Chocolate Options: Dark chocolate, milk chocolate or almond bark are other great chocolates to try out for this recipe.Nut Options: Diced hazelnuts or macadamia nuts are other great nuts to try in place of the diced almonds. Alternatively, you can omit the nut completely. Peanut Butter Alternatives: Creamy cashew butter, almond butter or Nutella can be used in these bites in place of the peanut butter if you wish.
