This Easy Blueberry Vinaigrette is ready in 5 minutes and the perfect addition to a summer salad. This dressing can be made with fresh or frozen blueberries
Combine all ingredients into wither a blender or food processor. Blend on low-medium until vinaigrette is well combined and no chunks of blueberries remain. I usually let mine run for at least 2 minutes.
Once well combined, taste and adjust the flavor of the dressing to your liking. Also, if the blueberry dressing is too thick you can add a touch more oil and blend more until the consistency is smooth and not thick. Enjoy!
Store leftover blueberry dressing in an airtight container in the fridge for up to 1 week. When ready to enjoy make sure to shake it up to recombine all the ingredients.
Olive Oil Note
Make sure you use plain olive oil and NOT extra virgin olive oil. The taste is much more neutral, and will let the blueberries shine. Alternatively, you could use another neutral tasting oil like avocado oil for this homemade dressing.
