Add Bacon to a medium sized skillet and cook over medium heat until cooked through. Once cool, crumble. To save time you can do this step ahead of time and store the bacon in the fridge.
In a small bowl add the Everything But the Bagel Seasoning (or DIY version, see notes) and set aside.
Combine cooked bacon, chopped green onion, goat cheese, cheddar cheese, cream cheese and plain non-fat Greek yogurt in a large bowl and mash/stir to combine.
Once combined, take a cookie scoop and scoop a small amount of the cheese ball mix then roll it in your palms to make a ball. Drop the ball into a small bowl of Everything But the Bagel Seasoning and roll until completely covered. Place on a parchment paper lined cookie sheet or large plate. Repeat until all the cheese mix is used.
Once all are coated, let chill in the fridge for a minimum of 1 hour to overnight. When ready to serve pair with crackers, bagel chips or pretzel sticks. Enjoy!Check out the recipe video for a more detailed look at prep!
Leftover Storage: Store leftover mini cheese balls in an airtight container in the fridge for up to 4 days. When ready to serve just place on a cracker, bagel chip or serve with pretzels.
DIY Everything But the Bagel Seasoning: If you do not have any Everything But The Bagel Seasoning you can make your own. Combine 1 ½ tablespoon of sesame seeds, black sesame seeds, flakey sea salt, minced dried garlic, minced dried onion, and poppy seeds Each in a small bowl and stir to combine.
