Turn on Saute mode to HIGH and add 1 tablespoon of butter. Once melted add ground beef, ground pork, diced onion, salt and pepper. Use a wooden spoon to break the meat up into smaller pieces and stir. Cook until no pink remains, about 5 minutes. Once cooked drain the grease from the meat then return to the pressure cooker.
Add all the remaining ingredients to the pot, stir to combine then close the lid and turn the nozzle to SEAL.
Cook on HIGH PRESSURE for 5 minutes then turn the nozzle (carefully I like to use a spoon and let it out in bursts) to do a quick release. Once the pressure is released remove the lid and stir. Serve with tacos, burritos or nachos and enjoy!
Rotel Note: If you do not want any tomatoes in your taco meat I totally understand and this ingredient can be left out. I find it gives the meat a lot of flavor and my kids enjoy it this way. Another option if you do not have Rotel is using so of your favorite salsa instead.Liquid Note: When cooking the ground beef and pork will naturally release liquid and I find adding additional water not necessary. I also do not drain the Rotel which gives the meat some liquid, plus the taco sauce. Too Much Liquid: If you find that after pressure cooking the meat there is an excess about of liquid still you can boil off some of the water by switching the Instant Pot to Sauté Mode on HIGH.
