Happy January everyone! I hope everyone had a wonderful holiday season. January is always an odd month to me; it’s cold, dreary and a lot of times I am recovering from all the cooking and craziness of the previous months. This Roasted Red Pepper Tomato Soup is one of my favorite post holiday recipes. It is super simple, ready fast and easy on the waistline. Plus, the soup itself is vegan so it is perfect for those Meatless Mondays! Although, if you are not vegan you could always throw on some grilled cheese bites or freshly grated Parmesan for the perfect finish. Whenever I am in a hurry, or trying to think of something delicious my mind immediately goes to pizza. As a family we eat A LOT of pizza, at least once a week. Therefore, I have come up with a number of delicious and creative pizza and flatbread recipes over the years. This Vegetarian Flatbread Pizza with Fresh Rosemary is one of my personal favorites. When coming up with this recipe I wanted something (semi) healthy and vegetarian. Also, I wanted something fast and versatile that could work as a meal or as an appetizer.
I love this Caprese Avocado Toast for so many reasons. It is very simple, quick to make, and can be served practically any time of the day. My favorite time of the day to eat this is for lunch, because it keeps me full and energized until dinner. Also this dish combines all of my favorites: bread, cheese and avocados!
